Stir Fried Noodles
Simple healthy stir fried noodles. Incredibly versatile meal that can be quickly prepared and cooked in a hurry. A great way to use up any ingredients left in the fridge. Looks and tastes delicious.

- Soft Noodles (1 nest per person)
- Protein of your choice
- Selection of mixed vegetables
- Oyster sauce (1 table spoon)
- Soy sauce (half tablespoon)
- Sugar (half teaspoon)
- Garlic (teaspoon)
- Coarse black pepper (half teaspoon)
- Spring onion (chopped into 1 inch lengths)
- Chillies for spice (optional)
Frying pan or wok
After each step below be sure to stir fry as you go. Stir frying helps to bind the flavours and ingredients together and stops everything burning to the bottom of the pan.
Add the cooking oil to the pan and allow time for it to heat up.get hot, Add garlic and pepper. Stir together for a few seconds.
Add the protein of your choice and any hard ingredients that take longest to cook. I have added some chicken and sliced carrots. stir fry together for at least 20 seconds.
Add the sugar (half teaspoon) and oyster sauce (1 table spoon) If Vegetarian? use mushroom sauce. It has the same consistency. stir fry for a minute.
Add other softer ingredients. Stir fry together. Allow at least 1 minute of constant stir frying.
Add the soft noodles and half a tablespoon of soy sauce. Stir fry together. If the pan appears to be a bit dry, just add a drop of hot water to the pan or turn the heat down a bit. cook for at least 1 minute.
Just before transferring your finished meal to your favourite dish. Add spring onions cut up into 1 inch lengths. Cook the spring onions for no more than 15 seconds to avoid them going soggy.
Plate up by scooping out the noodles onto the plate first and allow all the other ingredients to fall on top. Finally garnish with some freshly picked coriander and present with some chopsticks. Enjoy.
